General breakdown of a beef share - 40% grind (ground beef), 35% mid-cuts (short ribs, brisket, stew meat, fajita strips, roasts, etc.), & 25% prime & choice cut steaks (boneless ribeye or bone-in rib steak, KC strip, sirloin, chuck steak, sirloin tip steak, flank, & skirt steak). 

We also bring out marrow bones, beef broth bones, soup bones, animal fat for rendering tallow, & the offal (LKH, tongue, & oxtail).
